Clà Clà

Grapes: Barbera (100%).

Vinification: the grapes are hand harvested and carefully selected, then pressed with no addition of sulphur dioxide and left to ferment with wild yeasts at a temperature not exceeding 28 degrees. During the first week, the must is pumped over twice a day, then the "cap" is wetted for a period of time which depends on the condition of the grapes. After devatting, the wine completes its alcoholic fermentation in a steel tank and malolactic fermentation begins; the wine is then racked to oak barrels, where it rests for about 1 year.

Bottling: whenever necessary, the wine is clarified with fresh egg white, racked twice over a period of about 15 days, and then bottled without filtration. Clà can be put on the market approximately one year after harvest.

Tasting notes: ruby in colour; deep and complex on the nose, with fragrant notes of fruit and spicy hints. It has a rich entry on the palate and a great follow-through with abundant, yet fine tannins and good acidity. A great partner to savoury red meat dishes.
