Grapes: Pinot Noir (100%). Clones: 113, 114, 115, 292.

Vinification: the hand-harvested grapes go through cold maceration. Changes are made to temperatures, time and intensity of maceration in order to give more complexity to the wine. After devatting, the wines are immediately moved to oak barrels, where malolactic fermentation takes place. The wine is then racked to oak barrels, where it rests for 11 months, after which it is assembled and made ready for bottling.

Bottling: whenever necessary, the wine is clarified with fresh egg white; then it is racked, bottled without filtration and put on the market after at least 12 months from bottling.

Tasting notes: ruby colour, with a garnet red rim; it has a pervasive aroma of forest floor, spices and vanilla; it leaves sweet notes on the palate, with still perceptible tannins which are predictive of a fairly long lifespan. This wine can be paired with meat dishes, even elaborate.
